Class


The local news was doing some interviews with two of my classmates. My classmates have been in class now for one year & now wanting to branch out. It was a nice little story & sorry if you don't understand. I am in the background...somewhere for a short period.

Restaurant Style Salsa



Today was Restaurant Style Salsa making. It was on the menu for Hilda's birthday dinner,so I gave it a try. The salsa was super easy & so yummy! There are so many recipes out there, but I just love The Pioneer Woman & all her ideas.

All the ingredients & you may use more or less. We like garlic so garlic is what I added more of~all optional!


Chopped onion.


Chopped garlic or minced.


Chopped jalapeno.


Add salt.


Add sugar.


Add cumin.


Add half a lime juice. Oh ya, how could I forget the fresh cilantro & add that while your at it. Then pulse/blend  to your desired thickness.


Of course there had to be some sampling of the salsa,ha!

Yesterday we received a card in the mail from my sweet Nana. It started off Across the Miles~Sure wish I could show up on your doorstep instead of in your mailbox! Have a Happy Valentine's Day. Thanks~Nana it was very thoughtful of you & wish I could snap my fingers..poof..you are here! Only if it was that easy.

Blake, you did good!

I made some Valentine's Chocolate Covered Strawberries & sent them all to the dairy with Gerard,ha! We sampled them & yes they were divine!




There was even Valentine potatoes for dinner!


Gerard & I celebrated our heart day at home & instead of buying something we really don't need or want.... we decided to go on a little vacation in the Spring!! Actually, we have been talking/planning for months just now decided our destination & agreed. The tickets/hotel are booked & we will share the location a little later,ha!

On another SWEET note my sweetest & best of friends welcomed her fourth baby into the world on Valentine's Day. A sweet & lovely baby BOY!(!!!) Yeah, for Team Blue! Note: I was routing for you. He has 3 big sisters to tell him what to do & love on him plus Mommy & Papa are very proud too! I am thinking he looks a little like his sister Maeleigh here below. I am a little jealous cause my mom has already seen & loved on this sweet baby. I am so excited for them all. Congrats to the Geijsel Family~Arjen,Kimberly,Maeleigh, Gracelyn & Julianna. Miss you & many XOXOXO your way.

Frosty...Scrabble Day

This past weekend Gerard & I went to dinner with some friends & ate at a Chinese Restaurant called Wok & Chopsticks in Næstved. It was buffet style & also a place where they grilled your raw/fresh dish for you. I was really surprised how good it was & how it reminded me of American Chinese Restaurants. Here was just a little more nicer,ha.

 Gerard & I forgot we had the game Scrabble, it was put up in the closet somewhere. So we played the English version & had a big cup of coffee while playing. It realy was fun to play & when we finished one game we started another. A month ago in language class we played Danish Scrabble & yes I am proud to say my team won, oh ya! It was good practice & at least we could use the Danish dictinary for help...the entire time.  

The beginning of our first game & every game after that our words were longer & bigger,ha!

It was better to play Scrabble inside instead of this cold frosty weather.

6-8 Weeks



Last week Gerard's dad had fallen while getting out of the loader. Wessel managed to get back to the house & then the pain set in & couldn't walk so good. He waited a couple of days(stubborn) & Monday came around so he headed to the hospital. The local hospital Næstved is where they took x-rays & could not see anything so then he headed to Slagelse hospital. There the IT-scan showed a good clean break on the HIP. We all expected he would have surgery on Tuesday next day,but he went in at 10pm/22:00 on Monday. The doctors told Wessel the surgery went well & should heal fine. The next day we went to visit him. It really was a weird feeling for Gerard & myself to see him laying in the hospital bed. Especially, cause he is always working & not being still! Of course he was sore, but with the help of some guests(us) & good snacks from the convenient store that will bring a smile,ha. Gerard's mom kept us updated during the visits at hospital & he was doing a little better day by day. He had some therapy at the hospital & the Dr/nurses told him not do anything for 6-8 weeks with follow up visits. Also listen to his body & don't over do it. We joked that nurses told him he was a good patient. On Thursday, Wessel was able to come home & he was glad for that. Gerard helped his Mom move the sofa out of living room & put a small bed there instead.It helps since his room is upstairs. I believe he is having a tough time with sleeping & trying to find the right position so hopefully it will get a little better with time. Other than that he is in good spirits & we are happy he is home. The difficult part is yet to come......getting him to sit & stay inside during those weeks!!

Booked Tickets

On a bright note, Mom & Blake have booked their tickets to visit us here in Denmark. I think they picked a great spot for their summer vacation,ha! Gerard & I are so EXCITED  they are coming & can't wait. Gerard is extra happy cause then it's 3 against 1(me) in the house,kidding! We always joke about this when Mom & Blake are around. I have missed my Mommy so much & especially missed teasing Blake! Can't wait to start the summer off right.

1yr. in Denmark



January 31, 2011, was our 1 year mark that we moved to Denmark! Honestly, it has gone by so fast & yes some days were forever long.ha! It has been a good 1st year & hoping for many more to come in our future. 
 I am still going to language school & have been in school now for 5 months. It is progressing... little by little. Danish is hard to pronounce let me tell ya, I think its the 3 extra letters in the alphabet that get me.(å,æ,ø) Then when you put a American accent & have a little Texas twang in there ..... oh Lord...everyone needs PATIENCE then! 
 Gerard is the lucky one cause he already knows it & now days his free time is always helping me with my 20 pages of homework. Sometimes, I think he prefers to be with some of his other favorite girls,you know the ones that Mooo cause they don't talk back & ask so many questions! ha.
